Pumpkin chocolate chip brownies! Found the recipe here: http://honeynectarblog.blogspot.com/2012/07/pumpkin-pie-brownie-bites.html. I’m spending my spring break (tomorrow through Friday) working on an animal sanctuary in New York, so I wanted to make some baked goods I could eat on the car ride there. They’re sooooo good!

I’m spending my spring break (tomorrow through Friday) working on an animal sanctuary in New York, so I wanted to make some baked goods I could eat on the car ride there. They’re sooooo good!

Red potatoes with extra virgin olive oil (~evoo~), seasoned salt, garlic powder, sage, and thyme, roasted in the oven for 15 minutes at 350°F. Boyfriend and I snacked on this when we were hanging out at his house. It was soooooo good.

Breakfast: Oatmeal (cinnamon and spice flavor) and a Peanut Butter Cookie Larabar. I had to study for a huge midterm, so I wanted a quick breakfast that would be filling.

Lunch: Boca burger, cooked on the stovetop with a little bit of Earth Balance and nutritional yeast, and a mashed sweet potato, made with a little bit of Earth Balance, cinnamon, and just a sprinkle of brown sugar.
Fun fact: I cooked the sweet potato in the microwave! I had never done that before. It was super easy. If you’re ever pressed for time, I highly recommend it.

I was recently given a crapton of veggie burgers and a box of oatmeal for free, so I apologize if it’s a little boring around here for the next week. However, I’ll try my best to make veggie burgers and oatmeal as exciting and as delicious as I can :)

Dinner: Mishima Instant Miso Soup. My boyfriend and I found this at H Mart, a popular Asian supermarket.  Quick tip: A lot of miso soups have bonito flakes in them, which is a fish product and is NOT vegan. So make sure you check the ingredients closely :)  Happy eating!

They were hard to cut, but they taste pretty good.
